Chân gà sau khi lọc bỏ xương, rửa sạch rồi cho vào nồi luộc khoảng 2 - 3 phút, vớt chân gà ra ngâm qua tô nước đá lạnh khoảng 20 phút để chân gà được giòn ngon. Chuẩn bị sốt: cho 5 muỗng canh nước mắm, 4 muỗng canh giấm, nước cốt chanh, 1/4 muỗng cà phê muối, tỏi băm, ớt băm vào chén khuấy đều.
Đổ chân gà ra rổ cho ráo nước dùng khăn giấy thấm khô. Cà chua bi cắt đôi. Hành tím thái múi cau, ngò rửa sạch. Cho chân gà vào tô lớn, rưới phần nước sốt lên rồi thêm cà chua, hành tím, ngò. Trộn thật đều, đậy kín lại để ít nhất 2 tiếng trước khi dùng.
